Sweet chilli and garlic chicken

 

Ingredients: 

1kg of chicken mini fillets 

2cm cube of fresh ginger

5 garlic cloves

1 cup of honey

150ml of gluten free tamari

2 chopped chillies

2 table spoons of ghee or coconut oil

2 or 3 Spring onions

Sea salt to taste

1/2 cup of white wine 

200 grams of fresh pineapple

 

This is one of my all time favourite recipes for 2 reasons:

1. It's very simple to make, you throw everything into a pot and simmer. 

2. It's damn tasty!

 

Method:

Finely chop up the ginger, garlic and spring onion. Warm up the coconut oil in a pot, throw in the ginger and half the garlic. Lightly fry for 30 seconds on medium heat. Add the chicken & increase the heat to max and fry for 2 minutes.

Add all other ingredients except the pineapple and spring onion. Cover the pot & turn down the heat and gently simmer for an hour.

 

Serve on white rice (perfect post WOD/ dinner). After plating your dish finish it with chunks of fresh pineapple and a small sprinkling of finely chopped spring onion.
